  • 2 cup(s) baby spinach, washed and dried
  • 1 cup(s) water (1/2 cup or less for a dip)
  • 2 to 3 cloves roasted garlic or 1 clove raw
  • 1 teaspoon(s) lemon juice (or more to taste)
  • 1 pinch(es) sea salt
  • 1 ripe avocado
  • 2 tablespoon(s) crushed dry-roasted hazelnuts, lightly toasted pine nuts or sunflower seeds

Cold Spinach Soup or Dip Directions

  1. In a blender, place the spinach, water, garlic, lemon juice and salt. Pack the spinach leaves down and then blend until smooth, scraping down sides as necessary.
  2. Spoon the avocado out of the skin and into the blender and process again until smooth.
  3. Taste and add additional salt, garlic, or lemon juice if necessary.
  4. Divide into 4 equal portions and garnish with nuts.
